Mountain cuisine: the famous blueberry tart!

Blueberry tart? You can be sure that it will be on the menu of most resort restaurants. A wild mountain fruit par excellence, the bilberry is harvested at different altitudes depending on the mountain range, from June to September. When you’re in the mountains, it’s a good time to go with your family or friends to pick some and enjoy it as a tart on your return.
Here’s the secret recipe from the resort of Aussois in Savoie.
Recipe for Aussois wild blueberry tart :
To start with, you’ll need to make some shortcrust pastry, homemade of course.
The shortcrust pastry :
- 250g flour
- 150g butter
- 5g icing sugar
- 1 egg
- 1 pinch of salt
Pour the flour, sugar and salt into a dish. Add the butter, cut into pieces, and knead to obtain a sandy mixture. Add the egg and knead until smooth. Form into a ball and set aside in the fridge for 1 hour.
The blueberry tart:
Butter and flour a tart tin. Roll out the pastry with a rolling pin and pre-bake for 10 minutes at 180°. Top with 500g of fresh wild blueberries. Return to the oven for 20 mins. Sprinkle with 60g icing sugar.
